Our lamb meat share is charged by hanging weight, which is the weight of the carcass after removing head, hide, blood, feet, and organs. This weight is used since it is the weight the butchery used to decide how much to charge for their service. Our lamb meat share price is $12 per pound of the hanging weight, and you can choose between whole or half a lamb.
This price already includes the butchery processing fee, and since we only use an USDA certified butchery, the cost is higher than state-inspected butcheries (but worth it 🙂). On average, there’s about $4+ per pound that goes to the butchery (way higher than yak process fee).
Note that this is different from the actual packaging weight that you will get in the end. The hanging to packaging weight ratio varies based on gender, meat aging or deboning practices of the butchery.
Our Lamb Meat
What we’ve learned over the years from tasting our own lamb is that, comparing to store-bought products, our lamb meat tastes way more tender and sweet. The distinct lamb tastes is perhaps not for everybody but can be easily remedied by applying some herb, cooking alcohol or by simply removing the fat content from the meat.
Like our yaks, sheep also require significantly less water and grass than cattle. So our lamb meat desn’t just taste better, it’s better for our planet, too!
