Pricing

Whenever possible, we only send yaks at or over 3 years old to be processed, which aligns with the prime consumption period of yaks during age 2 to 4. This is twice as long comparing to the 18 month average beef cattle processing age. Allowing better life quality at the expense of a higher cost for the ranch.

Our yak meat share is charged by hanging weight, which is the weight of the carcass after removing head, hide, blood, feet, and organs. This weight is used since it is the weight the butchery used to decide how much to charge for their service. For yaks the hanging weight is generally 50% - 52% of the live weight. Yak steers or bulls can grow to around 1200 lbs while cows are around 700 to 800 lbs.

Our yak meat share price is $11 $8 per pound of the hanging weight, and you can choose between whole, half, or a quarter of yak.

Note that as mentioned earlier, there will be an up-front deposit for reserving an order which goes toward the total payment.

  • For quarter (1/4) share the deposit is $250.00

  • For half (1/2) share the deposit is $500.00

  • For whole share the deposit is $1000.00

The final amount owed will be determined by the actual hanging weight reported by the butchery to ensure you only pay for what you receive.

Also note that the up-front deposit is nonrefundable!!

This price already includes the butchery processing fee, and since we only use an USDA certified butchery, the cost is higher than state-inspected butcheries (but worth it 🙂). On average, there’s about $2+ per pound that goes to the butchery.

Finally, note that this weight is different from the actual packaging weight that you will get in the end. The hanging to packaging weight ratio varies based on gender, meat aging or deboning practices of the butchery.


The Benefits of Yak Meat

Yak meat is a leaner, healthier, and more sustainable red meat alternative to beef.

It offers higher protean, richer in omega-3, vitamins, minerals, and more tender than beef thanks to higher moisture content in yak meat. Recent study shows that grazing yaks going through winter weight-loss will have higher quality fat with higher vitamin contents in the meat. This align perfectly with the time of year (late spring) that we plan to process our yaks!

Yaks also require significantly less water and grass than cattle due to superior digestive efficiency and adaptation to harsh, sparse environments. So, yak meat isn’t just healthier for you, it’s better for our planet, too!
